    Meat Balls and Potatoes in a Skillet

    1 pound ground beef
    2/3 cup uncooked rolled oats
    1 medium onion, chopped
    1 teaspoon salt
    Dash of pepper
    2/3 cup evaporated milk
    2 tablespoons flour
    1/4 cup shortening or margarine
    4 cups thinly sliced raw potatoes (about 5 large)
    2 medium onions, sliced
    1 1/2 cups boiling water
    2 teaspoons salt
    1/4 teaspoons pepper

    Place ground beef, oats, chopped onion, 1-teaspoon salt, dash of
    pepper and evaporated milk in a mixing bowl.
    Mix together lightly but thoroughly. Divide meat mixture in 12
    portions and shape into balls; roll them in the flour to
    coat well. Melt shortening in a large frying pan. Add meatballs
    and brown on all sides over medium heat. When
    meatballs are well browned add potatoes, sliced onion, boiling
    water and the 2-teaspoons salt and 1/4-teaspoon
    pepper. Cover frying pan tightly with a lid, then cook over
    medium heat until potatoes are tender, about 20
    minutes.

    Makes 6 servings.
