    Gail's Palestinian Salad (Tobouli)

    1 bunch of Parsley
    3 tomatoes
    1 onion
    2 handfuls of cracked wheat (bulgar wheat)
    1/4 cup olive oil
    Lemon Juice
    Salt
    Take the cracked wheat and put to soak in a bowl of water that just covers the wheat. Allow to soak until the water is absorbed by the wheat.
    Finely chop the parsley, tomatoes and onions. A food processor is better but if you chop it fine enough by hand it will do.
    Now mix all the ingredients together with the olive oil, lemon juice to taste and salt to taste.
    It is highly recommended that this salad be made the day before and refrigerated overnight to get the best possible taste.
    Gail said that you should not be afraid to play with this recipe. Put in more of what you like and less of what you don't like. Even try putting in some things that are not in the recipe. It can only kill you once.
