Lemon Squares
1 cup margarine
2-1/2 cup flour
1/2 cup confectioner's sugar
4 eggs, beaten
2 cups sugar
4 TBSP flour
1 tsp. baking powder
pinch of salt
1/2 cup RealLemon Juice (or fresh lemon juice)
Melt margarine in a 12x9-inch pan. Add flour and confectioner's sugar. Mix well and pack in pan bottom and up sides. Preheat oven to 350 and bake crust for 20-25 minutes, until golden brown.
FILLING: Mix rest of ingredients and pour into hot crust. Bake 25-30 minutes, until top is golden brown. Sprinkle with powdered sugar and cut when cool.
