Hi...
I took this to a potluck dinner at church last night....none came home!! It was really great! ...spicy, but not too spicy!

CHICKEN ENCHILADA CASSEROLE
4-5 chicken breasts, cooked and cubed
1 can cream of celery soup
1 can cream of chicken soup
1 can Ro-Tel tomatoes
1 medium onion, chopped
1 medium green pepper, chopped
2 cups grated sharp cheddar cheese
Nacho Cheese Doritos
Mix all ingredients except Doritos and ½ of cheese. Place ½ of the remaining
cheese and ¾ bag of
crushed Doritos in bottom of greased casserole. Pour ½ of chicken mixture over
Doritos. Layer
again with remaining Doritos and remaining chicken mixture. Top with remaining
cheese. Bake at
350 for 25-30 minutes.
