I made this for dinner last night and it was wonderful!! I served it with stir fried veggies with sesame seeds and raspberry balsamic vinegar.....YUM!! What a great dinner.

CHICKEN COUSCOUS WITH CHERRY TOMATOES
1 tbsp olive oil
1 pound boneless skinless chicken breasts, cut into pieces
2 cups reduced sodium chicken broth
1/2 tsp salt
1/2 tsp pepper
1/2 tsp cumin
1/2 tsp cinnamon
2 carrots, sliced and cut into pieces
1/2 small onion, peeled and chopped
2 cups cherry tomatoes, halved
1 cup plain couscous
Heat oil in a skillet. Add chicken and saute 7 min. turning halfway through or
until 160 degrees on an thermometer. Remove to a plate and keep warm.
(2.) Add the broth to the skillet and stir in salt, pepper, cumin and cinnamon.
Add carrots and onion. Simmer, covered 10 min. or until tender. Remove from heat
and stir in tomatoes, couscous and chicken. Cover and let stand 5 min. Fluff
with a fork and serve.
MAKES 4 SERVINGS OF COUSCOUS WITH TOMATOES...
