This is a great way to make make pork and beans sandwiches!! A little messy, but well worth it! You coul also serve it over rice if you didn't want to use the buns.

Newfangled Pork And Beans
This is also good over rice instead of buns. Serve with a crisp cucumber salad.
1 Tbs. vegetable oil
1 medium-size bell pepper, diced (1 cup)
1 cup chopped onion
1 tsp. minced garlic
1 lb. pork cutlets (6 to , cut in 1/2-inch square pieces
28 oz. can baked beans
2-1/2 tsp. Dijon mustard
6 hamburger buns
1 cup shredded lettuce
1. Heat oil in large skillet over medium heat. Add pepper, onion and
garlic. Cook 5 to 7 minutes, stirring several times until vegetables
are almost tender.
2. Increase heat to medium-high. Add pork and stir-fry 1 to 2 minutes
until no longer pink.
3. Stir in beans and mustard. Cook 3 minutes loger or until pork is
cooked through and beans are hot.
4. Spoon about 3/4 cup pork and beans over each bun. Top with
lettuce. Serves 6.
