Smothered Chicken
1 Tbs. vegetable oil
1/4 cup EACH finely chopped: onion, green pepper, and celery
1 lb. skinless whole chicken breasts or thighs
1 pkg. Mushroom Gravy Mix
12 oz. can evaporated milk
Heat oil over medium-high heat. Add onion, green pepper and celery. Saute 2 minutes or until vegetables are crisp tender. Add chicken and cook 6 to 7 minutes each side or until browned. Combine mushroom gravy and milk. Stir into chicken mixture. Bring to a boil. Cover and simmer
15 minutes.
