I fixed our asparagus this way last week and it is WONDERFUL!! I will be making it this way quite often!

Cover's No-Guilt Roasted Asparagus
· Preheat oven to 450 – 475.
· Snap spears at natural breaking point (recommend the younger, thinner spears).
· Wash if necessary and dry between paper towels or kitchen towels.
· In a plastic bag, pour a little extra virgin olive oil. (I always grab a couple of extra produce bag for this purpose when I do my grocery shopping.)
· Place asparagus in bag.
· Add salt and freshly ground pepper.
· Toss until spears are evenly coated. Add extra evoo if necessary.
· Place on foil-lined sheet pan in one layer.
· Roast to desired doneness, about 10 to 15 minutes according to thickness of spears.
· Dig in!
