This recipe is really, really good. It calls for hot and spicy seasoning, but it is not too hot at all. My son, Paul, didn't think it was too hot....and he doesn't like spicy, so it is good!

Kung Pao Chicken with Brown Rice
Prep Time: 10 minutes

Ingredients
1½ pounds boneless, skinless chicken, diced into ¼ inch pieces
1 pack Sunbird Hot & Spicy Kung Pao Chicken Seasoning Mix
1 tablespoon sugar
1 tablespoon soy sauce
3/4 cup water
2 tablespoon oil
1/2 cup unsalted peanuts, chopped - extra for garnish if desired
4 green onions, sliced thin - extra for garnish if desired
4 cups cooked brown rice
Instructions
1. Blend seasoning mix, sugar, soy sauce, and water together and set aside.
2. Heat the oil in a large skillet or wok and stir-fry until well browned.
3. Add peanuts and stir-fry until toasted.
4. Add onions and stir-fry.
5. Add seasoning mixture and cook until thickened.
6. Serve with brown rice.
