I got this recipe from one of my mall buddies! She doesn't really cook or bake much (she is almost 90 years old!), but she got the recipe from one of her "BINGO" friends and knew I would love to make it for church...she was so right!! This is absolutely delicious!....really yummy and moist. I made it as a coffeecake for coffee hour at church, but it would be wonderful for a scrumptious dessert!

Cinnamon Cake
3 cups flour
3 cups sugar
1 cup oil
3 tsp. baking powder
4 large eggs
1/4 cup pineapple juice
1/2 tsp. vanilla
Filling:
3 or 4 large apples (peeled and grated)
4 tsp. cinnamon
1/2 cup sugar
Grease tube pan. In a large mixing bowl, whisk together flour, sugar, and baking powder. Make a well; add oil, eggs, pineapple juice and vanilla. Mix well. Grate apples in another bowl, blend with cinnamon and sugar.
Pour half of the batter and then half of the filling in the tube pan. Repeat with the other half of batter and filling.
Bake at 350 for 1 hour and 20 minutes. Let cool.
