Mushroom and Sausage Quiche
Rich!
One-9" refrigerated piecrust, fitted into a 9" glass pie plate
One-1 pound ground sausage, crumbled
1 T butter
1/2 pound fresh mushrooms, sliced
1/2 large Vidalia onion, chopped
4 eggs
1 cup sour cream
1 cup cottage
3 T all-purpose flour
3 T freshly grated Parmesan cheese
1 tbsp hot sauce
One 8 oz pkg shredded sharp Cheddar cheese
Preheat the oven to 350º.
Crimp the edges of the crust.
In a large skillet, cook the sausage. Drain and set aside.
Wipe out the pan and, in the same pan, melt the butter over medium-
high heat. Add the mushrooms and onion and saute' for 5 minutes, or until tender.
Place the eggs, sour cream, cottage cheese, flour, Parmesan cheese and hot sauce in a food processor and process until smooth, stopping to scrape down the sides of the bowl.
In a large bowl, stir together the sausage, mushroom mixture, egg
mixture and Cheddar cheese and spoon into the piecrust. Cover the
edges of the pie crust with aluminum foil to prevent the crust from
burning.
Bake for 50-60 minutes, until golden brown and the center is set.
Let cool for 10 minutes and cut into 8 wedges.
Serves 8
