    I will once I locate it again. Cranberry relish is awesome and so much better than the stuff out of a can.

    sure do...here it is:



    CRANBERRY COFFEECAKE
    1 cup margarine,softened
    1 cup sugar
    2 eggs
    2 cups flour
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
    1 cup sour cream
    1 tsp. almond extract
    1 can whole berry cranberry sauce
    1/2 cup chopped walnuts
    Cream sugar and butter. Add eggs; mix well. Combine flour,baking
    powder, baking soda, and salt; add to creamed mixture alternately with
    the sour cream.
    Add extract. Spoon 1/3 of batter into greased 9 inch square pan. Top
    with 1/3 of cranberry sauce. Repeat twice. Sprinkle with walnuts. Bake
    at 350 degrees for 55 to 60 minutes.
    Glaze:-
    1/3 cup confectioners' sugar
    5 tsp. warm water
    1/2 tsp. almond extract

    Notes:- I had to cook this more than 60 minutes in my oven. I also found
    the glaze too thin for my liking so I thickened it.

    Sweet Potato Casserole

    3 cups mashed sweet potatoes

    3/4 cup sugar

    2 eggs beaten

    2 tsp vanilla

    1/2 tsp. salt

    1/2 cup milk

    1/4 cup melted margarine

    Mix all together in a greased casserole dish

    TOPPING

    1 cup brown sugar

    1/2 cup melted margarine

    1 cup flour

    1 cup chopped pecans

    Spread over the potato mixture and bake for 30 minutes at 350*

    This is not low calorie, but I love this!

    Apple Salad II ( My family loves this salad my daughter asked for the recipe to make for a company dinner.)
    Servings: 15
    " Chunks of Granny Smith and Red Delicious apples, pineapple, pecans and raisins, make this anytime
    salad delicious. Folded into whipped topping, it makes it sublime."
    INGREDIENTS:
    5 Granny Smith apples - peeled, cored
    and chopped
    5 Red Delicious apples - peeled, cored
    and chopped
    2 (8 ounce) cans pineapple chunks,
    drained
    2 cups raisins
    1 cup chopped pecans
    1 (16 ounce) container frozen whipped
    topping, thawed
    DIRECTIONS:
    1. In a medium-size mixing bowl, combine the apples, drained pineapple, raisins, pecans and
    whipped topping. Mix well and serve chilled.

    Hawaiian Salad/Heavenly Hash

    Ingredients:

    Servings:
    10-12

    1 (20 ounce) can pineapple chunks in juice, drained
    2 (8 ounce) cans mandarin oranges, drained
    2 (15 ounce) cans fruit cocktail in juice, drained( I do not use this instead I use marchino cherries)
    1/2 cup coconut
    1 cup sour cream
    4 ounces Cool Whip, thawed (half of an 8 oz. tub)
    2 cups miniature marshmallows
    Directions:

    After draining the fruits, pat them with paper towels to get more moisture off.

    Stir together sour cream and Cool Whip. Add remaining ingredients and stir gently to combine.

    Chill at least 4 hours.

    This is a really easy recipe for a wonderful muffin.
    PUMPKIN MUFFINS
    1 box spice cake mix (dry)
    1 regular size can pumpkin
    fresh grated nutmeg (I didn't measure) maybe 1/8 teaspoon.
    Mix together & it's ready to bake!
    Put in cup cake papers & bake at 350 degrees for 15- 18 minutes depending on your oven. Enjoy!

    I have a couple...the first one, Baked pineapple is from one of our missionaries at church. It was a recipe from her family and it is yummy!

    Baked Pineapple



    1 cup crushed pineapple (with juice)

    1 cup sugar (1/2 cup is really enough....that is what I used)

    2 eggs, slightly beaten

    2 TBSP cornstarch

    1/4 cup water

    2 TBSP melted butter

    cinnamon



    Mix all ingredients together except the cinnamon. Pour into a greased 8x8-inch dish. Sprinkle cinnamon on top. Bake at 350 for 45 minutes.

    This next one is from my brother's ex-wife and it is really good too:

    Cranberry Salad

    2-3oz. Packages cranberry (or raspberry) jello

    1-tsp. lemon juice

    2 cups whole cranberry sauce

    1 cup crushed pineapple (drained)

    1 cup diced celery

    1 cup chopped nuts (walnuts or pecans)

    Dissolve jello in 2 cups hot water. Add 1 cup cold water and lemon juice. Chill until slightly thickened. Fold in the remaining ingredients.

    NOTE: I usually don’t wait for the chilling process. I put it all together, then put in the fridge. (Pam Nevin)
