Cheese & Pesto Meatloaf
"Tested/Keeper"
Serves: 6
2 large eggs, beaten lightly
3/4 cup finely chopped onion
2/3 cup fine bread crumbs
1/2 cup finely chopped green pepper
1/2 cup grated carrot
3 tablespoons "Sun-dried tomato pesto"
1 teaspoon salt
1/2 teaspoon black pepper
Combine these above 8 ingredients in a large bowl.
Add: 1 & 1/2 pound ground beef
Mix well. Press into ungreased 9x5x3-inch loaf pan.
Bake in a 350'f oven for about 1 hour until fully
cooked and internal temperature is 160'f.
Remove meatloaf from oven.
Spread 2 tablespoons more of Pesto on top
meatloaf.
Sprinkle with 1/2 cup of grated medium Cheddar
cheese.
Bake another 5-10 minutes until cheese is melted.
Let stand, loosely covered for 10 minutes before cutting!
