Zucchini and Cheese Quesadillas with Avocado Relish
3 Large Zucchini Sliced Lengthwise Into Thin Ribbons
8 6-Inch Flour Tortillas
2 Cups Grated Monterey Jack Cheese
Salt and Freshly Ground Black Pepper
Avocado Relish:
Ingredients: 1 Ripe Haas Avocado – Coarsely Chopped
1 Tablespoon Finely Diced Red Onion
2 Tablespoons Fresh Lime Juice
1-1/2 Tablespoons Coarsely Chopped Cilantro
Salt and Freshly Ground Pepper to Taste
Preheat the oven to 400 degrees F.
Lay 4 slices of zucchini over half of a tortilla. Sprinkle 1/4 cup of cheese over the zucchini. Season to taste with salt and pepper. Fold the tortilla over the filling to make a semi-circle. Repeat to make 8 quesadillas.
Brush lightly with olive oil and bake until the quesadillas are crisp and brown – about 6 minutes. Cut in half and serve with avocado relish.
