Gina's Mustard Chicken 4 boneless, skinless chicken breast halves (1-1/4 lbs.) 1/4 tsp. salt 1/8 tsp. pepper 1/2 cup Dijon mustard 1 egg, beaten 3/4 cup Italian-style dry bread crumbs Heat oven to 375. Spray 13x9 pan with cooking spray. Sprinkle chicken with salt and pepper. Spread mustard on both sides of chicken. Dip chicken egg, then coat with bread crumbs. Place in pan.
