VEGGIE PASTA SHELLS WITH CHEESE 16 oz pkg pasta shells 2 tbs olive oil 3 cups shredded carrots 12 oz pkg mushrooms, sliced 15 oz container ricotta cheese 10 oz pkg chopped spinach, squeezed dry 1 cup milk 2 eggs 1 tbs each flour and Italian seasoning 2 cloves garlic, minced 1 tsp salt 1/4 tsp pepper 8 oz pkg shredded mozzarella cheese Heat oven to 350°. Cook pasta according to directions, drain and set aside. In skillet, heat oil. Add carrots and mushrooms, cook until veggies soften and liquid evaporates. In bowl, combine next 9 ingredients. Stir in carrot mixture and reserved pasta. Transfer to ungreased baking dish, top with mozzarella. Cover with foil and bake 20 min. Remove foil, bake until cheese is melted and browned.
