Chicken and Wild Rice Casserole
2 cups cooked chicken breasts, cut into pieces
1 cup finely chopped celery
2 TBSP chopped onion
1 (6-oz.) box Uncle Ben's long grain & wild rice
1 can cream of chicken soup
3/4 cup Miracle Whip (I used mayonnaise)
1 cup Pepperidge Farm herbal dressing mix (I used Walmart's brand)
1/2 cup slivered almonds (optional)
Cook rice according to directions on box. Saute onions and celery in 1/8 cup (2 TBSP) butter or margarine. Add to the rice. Add the remaining ingredients (exceot the dressing) to the rice mixture. Spread rice mixture into a shallow casserole dish. Saute dressing mix in 2-3 TBSP butter or margarine until mixed. Sprinkle on to of the rice-chicken mixture. Top with almonds. Bake at 350 for 45-60 minutes.
