Here is a new twist on potato salad....it is wonderful....it has all kinds of good things in it. It makes quite a bit so it would be good to take to a potluck dinner or on a picnic.

Polish Salad
6-8 servings
2 large potatoes
2 carrots
2 stalks celery
2 tomatoes
2 hard-boiled eggs
1 golden delicious apples
1 dill pickles
1/3 sweet onions
Dressing
1 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon pickle brine
1 teaspoon dry mustard
salt and pepper
Peel potatoes, boil until tender, dice small.
Dice carrots, celery, tomatoes, eggs, and onion.
Peel and core apple.
Dice.
Mix together dressing.
Combine and refrigerate at least 3 hours.
