Bell Pepper Dip
2 lg. eggs, beaten
2 TBSP sugar
2 TBSP butter, melted
2 TBSP vinegar
6-8 oz. cream cheese, softened
1/2 cup chopped onion
1/2 cup chopped green pepper
Combine the first 4 ingredients in a small pan; stir well. cook over medium-low heat, stirring constantly with a wire whisk, until mixture is thickened (DO NOT BOIL). Remove from heat and let cool.
Beat cream cheese in a small mixing bowl at high speed until creamy, stir in egg mixture. Add onion and green bell pepper; stir well. Serve with corn chips, assorted crackers, raw veggies, etc.
This dip is different and very easy to make. It has a sweet taste because of the sugar.
