I made this for dinner last night and it is another great one! I especially loved the pear salsa...I used Feta cheese instead of Bleu cheese, just because I prefer it.

PORK WITH PEAR SALSA
PEAR SALSA
2 pears, cored and chopped
1/2 cup chopped toasted pecans
1/4 cup crumbled blue cheese **
2 TBSP pear nectar
1 TBSP brown sugar
1 tsp grated ginger
PORK CHOPS
1 TBSP vegetable oil
2 tsp sliced ginger
4 rib pork chops
1 tsp salt
1/4 tsp black pepper
1/3 cup pear nectar
Hot cooked egg noodles (optional)
1. PEAR SALSA: In a bowl, combine pear, pecans, cheese, pear nectar, sugar and ginger. Set aside.
2. PORK CHOPS: In skillet, heat oil. Add ginger, cook 1 min. or until crisp. Remove and discard.
3. Sprinkle chops with salt and pepper. In same skillet, cook chops 3 min. or until browned, turn over and brown other side 3 min. or until 160 degrees on thermometer. Reduce heat to low, transfer chops to serving platter.
4. Add pear nectar to skillet stirring to loosen browned bits. Simmer 3 min. or until thickened. Pour over chops. Top with salsa. If desired, serve with noodles. MAKES 4 SERVINGS.*
