15 Minute Cheesy Chicken & Rice Dinner
1 T. oil
4 boneless skinless chicken breasts
1 can chicken broth
2 C. Minute Rice, uncooked
2 C. broccoli florettes
¾ lb. Velveeta
Heat oil in large skillet on medium high heat. Add chicken, cover. Cook 4 minutes on each side or until cooked through. Remove chicken from skillet. Add broth to skillet, stir. Bring to a boil. Stir in Minute Rice, broccoli and Velveeta. Top with chicken; cover. Cook on low heat 5 minutes. Stir until Velveeta is melted.

Peg's Notes: Be sure not to cook the chicken for too long...maybe even undercook it a little before adding to the casserole. We thought the chicken was just a tad bit dry. I think I would also add less cheese...it is very cheesy..I would use 3/4 to 1 cup of Velveeta (6-8 ounces)....but that is up to your own personal preference.
