    All I can say is "WOW"!!! These are sooooooooo yummy! I only got to have a bite, but it was great. I only made up half of the recipe, but my hubby ate all of it except the one bite he gave me to sample it!! It takes a little bit of time to prepare, but it would be good for a late Saturday morning breakfast for that someone special!!

    Apple Griddle Cakes with Apple Pecan Syrup
    Recipe from: Port City Victorian Inn, Muskegon, MI.

    ~~~Griddle Cakes~~~
    1-1/2 cups sifted all purpose flour
    1-1/4 tsp. baking powder
    3/4 tsp. salt
    1/2 tsp. ground cinnamon
    1/4 cup sugar
    1 egg, well beaten
    1 cup milk, at room temperature
    1/4 cup butter or margarine, melted
    1 cup finely chopped apples
    Mix and sift flour, baking powder, salt, cinnamon and sugar; sift again.
    Combine egg, milk, butter and apples. Add gradually to the flour mixture,
    stirring only until dry ingredients are moistened.
    Bake on hot greased griddle.
    Makes 14 to 16 griddlecakes.

    ~~~Apple Pecan Syrup~~~
    3 TB butter or margarine
    1/4 cup chopped pecans
    1 cup maple syrup
    1/2 tsp. ground cinnamon
    Few grains salt
    2 cups thinly sliced peeled apples
    In a sauce pan melt the butter, and add nuts; brown lightly. Remove nuts.
    Add maple syrup, cinnamon and salt to butter in the sauce pan; add apples;
    cover; simmer slowly 10 minutes.
    Remove cover; simmer about 3 minutes longer. Remove from heat; add nuts.
    Serve with pancakes, waffles or French toast.
    Makes 6 servings.
