Old Fashioned Fried Chicken Cut up the chicken and refrigerate the pieces in salted icewater I have soaked it in cold water in the fridge overnight. Mix flour, salt, pepper, garlic powder, celery powder and any other seasonings you like .I add oregano, thyme, rosemary and basil mixed in they work wonderfully Dry the chicken, dredge in flour mixture Preheated with about 1/2 olive oil & butter, and fry nice and brown all over. This took maybe 15-20 minutes, I have on occasion done the fry step and removed to another pan refrigerate and put in the oven while I am getting the rest of the meal together Put into a hot oven 350-375 degrees for about one hour Lid on for the first twenty minutes, bake the remaining time uncovered, turning the chicken over about half way through the baking time. Cooking time varies depending on sizes of pieces, uniform size insures that all are cooked at the same time. When the chicken was done, remove from the pan to a platter, and serve. Gray can be made with dripping using milk instead of water gives a creamy consistency. |
