Pumpkin Pie Bars
Ingredients:
Bottom Layer Ingredients:
1can (29-oz.) pumpkin
1 cup milk
1 cup sugar
2 eggs
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1/2 tsp. salt
Middle Layer Ingredients:
1 yellow cake mix
Top Layer:
3/4 cup nuts, chopped
1-1/2 sticks butter, melted
Directions:
1. Mix Bottom Layer Ingredients and pour the mixture into a 9x13 inch greased baking dish.
2, Evenly sprinkle Middle Layer (the cake mix) over the Bottom Layer and gently pat it down with your hand.
3. Sprinkle nuts on top of the Middle Layer.
4. Top with the melted butter. Try to spread the butter as evenly as possible.
5. Bake at 350 for 45-55 minutes.
NOTE: These should be served on a plate--they cannot really be held in the hand because the pumpkin is on the bottom and does not get hard enough to hold.
