Hi...
I am just about ready to serve this up for dinner....I already know that it is going to be great!!
This is a cooking for 2 recipe, but I used the whole 1 pound of kielbasa and added extra veggies....because this would make great leftovers! I am serving it as a wrap (in a tortilla) instead of on rice....we have been "riced" out this week, so I am going to try it this way!

Kielbasa Skillet |
1/2 pound smoked kielbasa or Polish sausage, sliced
1 cup frozen French-style green beans, thawed
1/2 cup sliced fresh mushrooms
1 tablespoon reduced-sodium soy sauce
1 cup hot cooked rice
In a large skillet coated with cooking spray, saute kielbasa until browned. Add
the beans, mushrooms and soy sauce; saute 4-5 minutes longer or until vegetables
are tender. Serve with rice.
Yield: 2 servings.

Peg’s Notes: I also added onions and a small yellow squash to the sautéed veggies along with the mushrooms and green beans.
I also served this as a wrap (wrapped in a tortilla) instead of serving over rice.
