We had this salad a few nights ago and it was delicious!! ....very pretty salad and full of flavors! This makes a great summer meal for those hot summer nights! It would also be a beautiful luncheon salad too.

Pineapple Chicken Salad
This salad is very colorful and full of different tastes.
4 Chicken Breasts, cleaned and sliced in half length wise
1 can chunked pineapple
1/2 cup orange juice
2 teaspoons ginger
2 teaspoons brown sugar (I use brown sugar substitute)
baby spinach leaves
sliced mushrooms
cranberry raisins
manderin oranges
pecans
feta cheese
we use free ranch or Dried tomato Vinergrette
place sliced chicken in a container that you can seal, drain pineapples and pour the juice over the chicken with 1/4 cup orange juice and let marinate for an hour
pan fry the chicken until tender, add pineapple, 1/4 cup orange juice, ginger, and brown sugar bring to bowl and then simmer for 20 minutes.
prepare salad
place chicken mixture over salad top with dressing,manderin oranges, pecans and feta cheese, enjoy!
