I made this dish last night to go with the savory beer pork chops...
This is so good and a really great twist to just plain mashed potatoes!

POTATO PARSNIP MASH
2 leeks, trimmed and chopped
1/4 cup unsalted butter
3 parsnips, peeled and sliced
1 1/2 pounds potatoes, peeled and cubed
2 cups chicken broth
1 cup shredded extra sharp white Cheddar cheese
1 tsp chopped sage
In saucepot, cook leeks in butter 3 min. Add next 3 ingredients, bring to a boil. Reduce heat and simmer 15 min. or until tender. Mash potato mixture. Stir in cheese and sage. Season with salt and pepper, if desired. MAKES 8 SERVINGS.*
