    Hi....

    Here is the recipe for another favorite....a special favorite for my son Scott.

    There is a story that goes with this recipe! When my boys were little, Scott really liked these turkey medallions (He was probably 5 or 6 at the time). He liked them so much he took some of the leftovers and hid them in his bed for a bedtime snack!! He thought I would be mad at him so he snuck them in!! I saved some of them for him to come by and pick up today....He doesn't have to hide them anymore!!

    Turkey Medallions



    1 lb. ground turkey

    1/4 cup bread crumbs

    1/2 tsp. ground sage

    1/2 tsp. ground allspice

    1 egg

    Salt

    1 TBSP oil

    1/2 cup water

    1 TBSP cooking or white wine

    1 TBSP butter or margarine



    In large bowl, mix turkey, bread crumbs, sage, allspice, egg and salt. With well floured hands, shape turkey mixture into small meatballs. With palms of hands, flatten balls into 1/4 inch thick patties.

    In skillet over medium high heat in hot oil, cook turkey patties a few at a time until turkey loses its pink color and is thoroughly browned on both sides. Repeat with rest of the patties and place on a plate when browned.

    Into drippings remaining in the skillet, over medium low heat, stir in water, wine, butter and 1/2 tsp. salt, stirring to loosen brown bits in skillet.

    Spoon turkey medallions into a 9x12 casserole dish. Top with the pan drippings. Cover with a lid of foil and bake at 350 for 30 minutes or until heated through.
