Nantucket Cranberry Pie
2 cups fresh whole cranberries (washed and drained)
1/2 cup chopped walnuts
1-3/4 cups sugar, divided
2 eggs
1 cup flour
4 TBSP butter or margarine, melted
2 tsp. almond extract
slivered almonds
1. Butter well the bottom and sides of a deep dish pie plate or pan. Put the washed and drained whole cranberries in the bottom of the dish. Chop walnuts and combine with 3/4 cup of sugar....place on top of the cranberries.
2. Beat the eggs, add 1 cup of sugar and beat until frothy. Add flour, melted butter and almond extract. Pour the batter on top of the berries and walnuts. Sprinkle top with slivered almonds.
3. Bake at 350 for 45 minutes or until golden brown.
4. Sprinkle with sugar (I used the natural raw or turbinado sugar).
Best served warm ..... you can also serve with a scoop of vanilla ice cream.....It is wonderful even if it isn't warm anymore!!
