I love lima beans so I really loved this dish. I am not quite sure what is the difference between lima beans and butterbeans....but they seem to be just like baby lima beans...but they just take a lot longer to cook. The bacon, onions and balsamic vinegar really add that special "kick"!

Butterbeans With Bacon & Onions
2 10-oz. pkgs. frozen butter beans
6 slices lean bacon
4 green onions, chopped
2 cloves garlic, minced
1/2 cup chopped fresh parsley
1/2 tsp. salt
1/2 tsp. pepper
1 Tblsp. balsamic vinegar (optional)
Cook butter beans according to package directions, set aside.
Cook bacon in large skillet over medium-high heat until crisp; remove bacon, reserving drippings in skillet. Crumble bacon and set aside.
Cook green onions & garlic in bacon drippings until tender, stirring often. Stir in beans, parsley, salt, pepper, & if desired, vinegar. Cook until just heated.
Transfer to serving dish & sprinkle with crumbled bacon
Serves 5-6
