    Hi ...
    I served this recipe this week with pork chops and roasted
    cauliflower and onions....it was a great compliment with the pork.
    It is just delish!

    Cranberry Rice Casserole

    This cranberry rice recipes is packed with flavor.
    Serve this rice with pork or chicken for a delicious meal.


    1 TB olive oil
    1 tsp. butter
    1 medium onion, finely chopped
    1 cup brown rice or a blend of brown and wild rice
    2 cups chicken broth
    1/4 tsp. salt
    1/8 tsp. ground black pepper
    1 cup frozen chopped spinach, thawed, drained
    2 tsp. curry powder blend, or to taste
    1/2 cup dried cranberries

    In a medium sauce pan over medium heat, sauté the onion in olive oil and butter.

    When onion is tender, add the rice and cook for about 1 minute longer, stirring
    constantly.

    Add chicken broth, salt, and pepper.

    Cover and cook for 30 minutes. Add remaining ingredients and continue cooking until
    rice is tender, about 10 to 15 minutes longer. Taste and adjust seasonings.

    Serves 4.
