This is an old time favorite recipe. It came from my mom who found it in a Palm Beach cookbook. It is so yummy!!

Pork Chop Casserole
4 pork chops, trimmed of fat
6 TBSP long grain rice (uncooked)
2 green peppers, slice in rings
2 medium onions, sliced
2 tomatoes, quartered
1-1/2 to 2 cups chicken broth
Pinch of thyme
Brown chops a bit. Place rice in bottom of a 2-qt. casserole. On top of rice place the chops, then peppers, onions, and tomatoes. Heat the broth to boiling in the pan the chops were browned in, getting up the little pieces left in the pan. Pour onto casserole leaving some to add during baking. Bake at 350 for 1 to 1-1/2 hours. Cover in the beginning then take the lid off the last 15 to 30 minutes.
