    The chicken was really juicy and tender...I served it with rice pilaf and stir fry sugar snap peas with onions, chives and some dried dill sprinked on while cooking. It was a real gourmet meal!!

    PECAN CRUSTED CHICKEN

    1/3 cup honey
    3 tbs light soy sauce
    1 1/2 cups ground pecans (you can also use walnuts or almonds)
    4 boneless skinless chicken breast halves, pounded to 1/2 inch thickness
    1/4 tsp salt
    1/8 tsp pepper

    Heat broiler.* Coat broiler pan with cooking spray. In a bowl, whisk honey and soy sauce. Spread pecans on a plate. Dip both sides of chicken breasts in honey and soy mixture and then in pecans. Place on broiler pan. Season both sides with salt and pepper.

    Broil 2 min. per side. Reduce oven temp to 500 degrees* and place broiler pan in oven. Bake 6 min. or until done. Place remaining honey and soy mixture in a saucepan and boil 1 min. Drizzle honey mixture over chicken and serve. Goes good with wild and long grain white rice pilaf and a tossed green salad. MAKES 4 SERVINGS OF PECAN CRUSTED CHICKEN.*
