    This recipe is so quick and easy to make up and very tasty! Just cook the rice earlier in the day and when dinner time comes it only takes about 15-20 minutes from the pan to the table!

    Beef and Vegetable Fried Rice

    1 lb. ground beef
    2 cloves garlic, minced
    1 tsp. grated fresh ginger or 1/4 tsp. ground ginger
    1 red bell pepper, cut into 1/2" pieces
    1 pkg. (6 oz.) frozen pea pods
    3 cups cold cooked rice
    3 TB soy sauce
    2 tsp. dark sesame oil
    1/4 cup thinly sliced green onions

    Brown ground beef with garlic and ginger in large nonstick skillet over medium heat 8 to 10 minutes
    or until beef is not pink, breaking beef up into 3/4 inch crumbles. Remove beef with slotted spoon.
    Pour off drippings.

    Heat 2 tablespoons water in same skillet over medium-high heat until hot. Add bell pepper and
    pea pods; cook 3 minutes or until pepper is crisp-tender, stirring occasionally. Stir in rice, soy
    sauce and sesame oil.

    Return beef to skillet; heat through. Stir in green onions.

    Makes 4 servings.
