Hi--- Here is another great way to liven up your carrots! Enjoy! hugs, peg Spiced Carrots 1/4 cup olive oil 1 cup onion, chopped 2 TBSP fresh ginger root, grated 1 tsp. cinnamon 1 tsp. cumin seed, toasted and ground (I just used ground cumin) 3 TBSP sugar OR honey 2 lbs. carrots, trimmed, peeled and sliced 1/4"thick 3 cups chicken stock salt 3 TBSP fresh dill OR cilantro, chopped Warm the olive oil in a large saucepan over medium heat. Add the onion and cook until tender and translucent, 8 to 10 minutes. Add the ginger, cinnamon, cumin and sugar or honey and cook for another 2 minutes. Add the carrots and enough stock or water to just barely cover the carrots. Simmer, covered, stirring occasionally, until the carrots are tender and the liquid is reduced,15 to 20 minutes.
