Well, with a name like this I just had to try this recipe!! It was so, so yummy! I used a smaller baking dish (8x8-inch square) and only made up half of the topping (1/2 stick of butter and 18 crackers, crushed). I will definitely make this recipe again!

Bugs Bunny’s Favorite Carrot Casserole

Serves: 6
Cooking Time:30 min
Ingredients
1 pound carrots, peeled
1 small onion
1 cup (2 sticks) butter
1 TBSP all-purpose flour
1 cup milk
1 tube Ritz crackers
Instructions1. Preheat oven to 350.2. Cut the carrots into 1-inch pieces and boil till tender. Drain and mash. (May process in blender or food processor for a few seconds).3. Chop onion and saute in half the butter till softened. Do not brow4. Whisk in flour, then milk, and continue cooking till the sauce is thickened.5. Add mashed carrots and stir to combine.6. Transfer to a buttered (or sprayed with Pam) 9x13-inch baking dish (Can use smaller, square or round dish to reduce the quantity of topping.)7. Make topping: crush crackers and mix with remaining butter, melted. Sprinkle topping on carrots.8. Bake in preheated oven for 20-30 minutes. If casserole is prepared in advance and refrigerated, increase baking time at least 10 minutes.
Notes
Though the topping adds flavor, the carrot portion is very tasty on its own, some topping may be eliminated altogether.
