This soup is really great....very healthy and hardy. It makes a lot so you can have it all week or share it with friends and neighbors!

Portuguese Potato Soup

Ingredients:
8 cups (2 L) chicken stock
1 lb (455 g) kielbasa sausage, diced
14 ozs kidney beans, drained
1 lb red potatoes, diced
1 - 14 fl oz (398 ml) can tomatoes, diced
1/2 head savoy cabbage, coarsely chopped
1 lb (455 g) turnips, diced
2 leeks, white & light green parts only, chopped
2 carrots, diced
1 onion, chopped
4 garlic cloves, minced
bay leaf
salt & pepper to taste
Directions:
1. Combine all of the ingredients in a large pot. Bring to a boil.
Then, reduce the heat & simmer, uncovered, until the soup is thick,
stirring occasionally; about 2 hours
2. Season to taste with salt & pepper.
Serves 8
