    Grilled Cajun Pork

    Ingredients 

    Cajun Rub: 

    3 tablespoons paprika 

    1 teaspoon cumin 

    1 teaspoon cayenne 

    1 teaspoon allspice 

    1 1/2 teaspoons salt 

    2 tablespoons light-brown sugar


    Pork and Rice: 

    6 center-cut boneless pork chops (4 ounces each) 

    2 cups long-grain white rice 

    1 15 ounce can kidney beans 

    1 10 ounce package frozen corn, thawed 

    2 scallions, sliced


    DirectionsCajun rub: 

    1. Combine paprika, cumin, cayenne, allspice, salt and sugar. Reserve 1 teaspoon rub.


    Pork and rice: 

    1. Sprinkle remaining rub on both sides of pork. Let stand 20 minutes. Bring 4 cups water to a boil in large saucepan. Add rice and reserved teaspoon rub. Cover; simmer 20 minutes. Drain and rinse beans; add to rice along with corn and scallions. Cover and cook 5 more minutes. 

    2. Meanwhile, prepare grill with medium-hot coals or heat gas grill to medium-high. Grill pork for 4 minutes per side or until an instant-read thermometer registers 160 degrees F. Serve with rice on the side.
