Southwest Chicken & Rice Bowl

Ingredients:
1¼ cup White Rice
Olive Oil
¾ lb Chicken, ½" cubes
Kosher Salt & Freshly Ground Black Pepper
¼ cup Queso Blanco, shredded
½ cup Kidney Beans, drained
¼ cup Frozen Corn
¼ cup Tomatoes, finely chopped
1 Jalapeno, finely chopped
⅓ cup Salsa
Fresh Green Onions, chopped Fresh Cilantro, chopped Lettuce, chopped
Directions:
Cook rice according to package directions.
Heat oil in a medium skillet over medium heat. Season the chicken with salt and pepper. Add the chicken and let brown, about five minutes on each side. Once golden brown, remove from the heat and let sit.
In a small saucepan, warm the kidney beans and season with a dollop of salsa, salt, and pepper. In a separate saucepan, warm the corn. In a small bowl, mix the tomatoes, red onion, and jalapenos.
Once the rice is finished, stir in the green onions. Begin layering the ingredients in bowls. Start with rice and onions, beans, corn, chicken, tomato and jalapeno mix. Top with fresh cilantro, cheese and sour cream, if desired.
