Strawberry Chicken
4 boneless chicken breasts
2 cups sliced locally grown strawberries
a dash paprika
lemon pepper to taste
1 tsp. fresh basil
1/8 tsp. chili powder
1/2 tsp. fresh grated ginger root
1 tsp. fresh chopped garlic
1/2 cup chicken broth
1/2 cup apple cider or juice mixed 1 tbsp. cornstarch (set aside)
1 tbsp. orange liqueur or orange concentrate
Sprinkle both sides of chicken breasts with paprika and lemon
pepper, then brown for approximately 3-5 minutes. Add broth and
seasonings and bring to a boil. Cover and reduce heat to simmer.
Turn chicken pieces several times, cooking until chicken is tender.
During the last five minutes, add strawberries, liqueur and
cornstarch mixture, whisking until sauce is smooth and thickened.
Serve with pasta, rice or garlic mashed potatoes.
