I made this last week....it is really good and very filling!! The recipe sounds a little confusing because of the layers, but just read it thru before you start and it will work out just fine! hugs, peg Cheesy Enchilada Stack This hearty, one-dish meal features ground beef seasoned with Pace Enchilada Sauce, layered with tortillas, refried beans, green chiles and cheese. Prep time: 20 minutes Cook time: 50 minutes 1 lb. ground beef 1 jar (17.5-oz.) Pace Enchilada Sauce 6 flour tortillas (10-inch) 2 cups shredded Cheddar cheese 1 can (16-oz.) refried beans 2 cans (4-oz. each) chopped green chilies, drained Chopped green onions Cook ground beef in skillet until browned. Pour off fat. Add 1/2 cup enchilada sauce. Stray baking sheet with vegetable cooking spray. Place 1 tortilla on baking sheet. Top with 1/3 of the meat mixture and 1/4 cup cheese. Top with 1 tortilla, 1/2 of the refried beans, 1/2 cup enchilada sauce, 1 can of chopped chilies and 1/4 cup cheese. Repeat layers. Top with 1 tortilla, remaining meat mixture and 1/4 cup cheese. Cover with foil. Bake at 400 for 40 minutes or until hot. Uncover. Top with remaining enchilada sauce, cheese and green onions. Bake for 5 more minutes. Cut into wedges. Makes 8 servings.
