    OK...I know this might sound strange having mashed turnips and applesauce mixed together, but I made it last night and it is really good!!

    Turnip Casserole

    2 medium turnips (or several small)
    1 cup applesauce
    3 TBSP butter or margarine, softened
    2 tsp. sugar
    1 tsp. salt
    1/8 tsp. pepper
    1 egg
    2 TBSP melted butter
    3/4 cup bread crumbs

    Peel, cube and cook the turnips. Mash well. Combine mashed turnips with the applesauce, 3 TBSP butter, sugar, salt, pepper and egg. Place mixture into a greased casserole dish. Combine the melted butter and the bread crumbs and put on top of the casserole. Heat, uncovered, at 350 for 30 minutes. This casserole may be prepared ahead of time and kept in the refrigerator. Heat just before serving.
