Key Lime Cheesecake
16 oz. cream cheese, softened
1/2 cup sugar
2 TBSP fresh lime juice (use key limes if you have them)
1 tsp. grated lime peel
1/2 tsp. vanilla
2 eggs
9" graham cracker pie crust
Mix cream cheese, sugar, juice, peel and vanilla with an electric mixer on medium speed until well blended. Add eggs. Mix until blended. Pour into crust. Bake at 350 for 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight.
