Cajun Squash
1 medium onion, sliced
1 clove garlic, minced
1 TBSP olive oil
1 medium zucchini, sliced
2 medium size yellow squash, sliced
2 tomatoes, peeled and quartered
1/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. dried whole oregano
1/8 tsp. dried whole thyme
1/4 tsp. hot sauce
Saute onion and garlic in olive oil in a skillet until crisp-tender. Add zucchini and yellow squash; cook vegetable mixture over medium-high heat, stirring constantly, 5 minutes. Add tomatoes and remaining ingredients; cook, stirring constantly, 2 minutes. Serve immediately.
