    Hi--
    These are really yummy!! What a great way to eat squash! This one is a "keeper"!!

    Squash Croquettes

    1 lb. yellow squash, sliced
    1/2 onion, sliced
    1 cup shredded cheddar cheese
    1 egg
    1 cup crushed crackers or breadcrumbs (plus a little extra to roll croquettes in)
    salt and pepper to taste
    Mrs. Dash (optional)

    Bring squash and onion to a boil for 2 minutes. Drain and allow to cool. Mash the squash and onions a little bit and then add the other ingredients. Mix well and shape into balls and roll into crumbs to coat then flatten to make patties. Saute in a little olive oil for 2 to 3 minutes, turn over and cook 2 to 3 minutes on the other side.
