    2 deep dish pie shells
    2 lbs sausage
    3 med potatoes grated
    1 med onion grated
    12 eggs
    all the cheeses you want.

In pie shell, while you are browning the sausage, put in in any order, potatoes, onion and cheeses - I always layer. Then the sauage goes in with more cheeses. I put the pie shells on a large cookie sheet and then whip the eggs and very slowly pour into the pie shells. Bake at 350 until the egg is set (anywhere from 30 - 60 minutes) Enjoy! These freeze great! I usually make these a few days ahead. Leave one out for Thanksgiving or Christmas morning and freeze the other one.
