Oh my gosh...this salad was sooooooooooo good. I used Laughing Cow Herb and Garlic soft cheese instead of the Brie and used regular sliced almonds (because that is what I had on hand). Enjoy! hugs, peg BRIE AND APPLE SPINACH SALAD WITH CRANBERRIES 1/4 cup olive oil 2 tbs white wine vinegar 1 tsp Dijon mustard 1/4 cup dried cranberries 10 oz bag spinach leaves 1 Gala or Granny Smith apple, cored and thinly sliced 1/4 pound wedge Brie cheese, sliced 1/4 cup smoked whole almonds In microwave bowl, whisk together oil, vinegar and mustard. Stir in cranberries. Microwave 15 seconds or until cranberries plump. With slotted spoon, remove cranberries. Place spinach on serving platter. Arrange apples and Brie slices in fan shaped pattern. Top with cranberries and almonds. Drizzle with warm dressing.
