    I made this for dinner a few nights ago and it is really delish! .... and a quick and easy meal to make. I served it with some fresh fruit on the side. It was great for dinner, but would be nice to serve at a luncheon also.

    Mexican Crustless Quiche
    5 large eggs
    1/4 cup all-purpose flour
    2 Tablespoons butter - melted
    3/4 of a 16 ounce container of cottage cheese
    2 cups Monterey Jack cheese
    1 (4-0unce) can of green chili peppers (with juice)
    Preheat oven to 400 degrees.

    Prepare a 9-inch pie dish by spraying the inside generously with cooking spray.

    In a large bowl, beat the eggs until frothy. Add the flour and melted butter (cooled to room temperature) and give it a nice mix.

    Add the cottage cheese, Monterey Jack cheese and green chili pepper. Mix until well combined. Mixture will be lumpy.

    Pour mixture into prepared pie pan. Bake for 10 minutes at 400 degrees. Reduce heat to 350 and bake an additional 20 minutes.

    The quiche is done when a toothpick inserted into the center comes out clean.

    Let the quiche set for 5 minutes before slicing into wedges and serving.


    This is a very easy recipe. Basically you just mix together 6 things, pour it in a pie dish, cook it and eat it. Delicious!
