Autumn Apple Carrot Casserole
Serve this tasty dish with pork chops and fresh cider for a real harvest feast.
Ingredients:
6 medium apples, peeled, cored, and thinly sliced.
3 cups peeled and thinly sliced carrots
1/3 cup brown sugar
2 tablespoons flour
3/4 cup orange juice
Preheat the oven to 350°F. Lightly grease a 3-quart casserole with olive oil. Arrange half the apple slices in the casserole and add half the carrot slices. In a small bowl, combine the brown sugar and flour; sprinkle half this mixture over the carrots. Add a second layer each of apples and carrots and top with the remaining brown sugar mixture. Pour in the orange juice and bake for 45 minutes.
