We had these potatoes for dinner last night and they were wonderful!
I looked at the date when I had printed out this recipe and it was August 27, 2008!!....so see, I do eventually get to all the recipes I print out! It just takes a while. Too bad I waited so long to try this one because it is a keeper! I will be making this many more times to come.

Honey Roasted Red Potatoes
1 pound red potatoes, quartered
2 tablespoons diced onion
2 tablespoons butter, melted
1 tablespoon honey (used 2)
1 teaspoon dry mustard (used a squirt of yellow mustard)
1 pinch salt
1 pinch ground black pepper
Preheat oven to 375. Lightly coat an 11x7 inch baking dish with
nonstick cooking spray. Place potatoes in a single layer in prepared dish, and top with onion. In a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion. Bake in the preheated 375 degree oven for 35 minutes or until tender, stirring halfway through the cooking time.
***These were awesome! My husband and I both loved them. I baked them for about an hour at 400, stirring every 15 minutes.
